Hand-picked grapes that are gently pressed and transferred by gravity into stainless steel tanks where they undergo a maceration with the pellets for a week at 5° C. Then fermentation under controlled temperature with regular pigeage. Maturation of 6 months in large barrels of 500 liters (10%). The remaining 90% matures further in stainless steel and then blended.
