Wonderfully shiny, pale yellow color. Remarkable mineral nose with impressions of lemon zest, white blossom and delicate notes of white and yellow fruit. Wonderfully full and creamy in the mouth, where its strong mineral properties come to the fore even more. This is Chablis at its best. A unique and noble expression of Chardonnay that is almost only reflected in Chablis. Impressive, balanced and long finish. Beautiful wine!

A noble accompaniment to creamy fish dishes with sauce or pure preparations of crustaceans such as lobster and, of course, oysters that showcase the unique terroir of Chablis in an unlikely way.

vinification

After manual picking and a strict selection, a controlled fermentation follows in a mix of stainless steel barrels and large wooden cuves at a low temperature. The wine then remains on its lees for another 15 to 18 months and is filtered and clarified before bottling.
